Culinary Director

John Taube

Born and raised outside of Chicago, John Taube’s love for fine dining blossomed in the Chicago kitchens of Hotel Baker, Moto Restaurant and as the pastry chef working under MICHELIN® Star chef Charlie Trotter. Over the next six years, Taube honed his fine dining skills at NoMad New York working under Chef Daniel Humm, during which time the restaurant was awarded a MICHELIN Star, three New York Times stars, San Pellegrino’s 64th best restaurant in the world and numerous James Beard nominations.

Since joining Hau Tree, Chef John is now living out his dream as a full-time resident of O’ahu, where he enjoys utilizing the island’s unique bounty in his culinary creations, while building strong relationships with local farmers and fishers.

JEN ACKRILL

Jen Ackrill is a veteran mixologist based in Honolulu, Hawai'i, where she has headed up cocktail programs for the top bars and food festivals for nearly a decade. Most recently, Jen oversaw the highly successful cocktail menu at Sky and Top of Waikīkī. She currently serves as Beverage Director at Kaimana Beach Hotel and Hau Tree, the best spot in Waikīkī to enjoy sunset cocktails by the sea.

The Hau Tree cocktail menu is designed for the liquid traveler whether they are visiting the hotel or just stopping in for a quick pau hana drink; there is a cocktail for every person, from the sometimes forgotten vodka soda fan to the nerdy cocktailian. The drinks are designed to excite and pique conversation with nods to the classics and reworks of some favorite beach cocktails.
